This ancient wine variety is traditionally cultivated on the western hills of Friuli. It was the Benedictine friars of the Abbey of Rosazzo who promoted its cultivation in Collio, Brda and Vipava. The name Benedete, recalls the centuries old history of Ribolla. The wine must, after maceration on the skins for 18 hours, is then fermented and fined in stainless steel.
It is a delicate and fruity wine, outstanding as an aperitif, it pairs well with appetizers, soups, fish casserole and seafood dishes based on shellfish.
