Following an initial fermentation in steel tanks and partially in barriques; the base of 100% Ribolla Gialla grapes are re-fermented in large horizontal autoclaves; followed by a fining process on the lees for a period that is never less than 30 lunar cycles.

During this time span the refermentation goes on, very slowly, until the residual sugar drops below 3 g/l.

The long refining process is completed by at least 12 months in the bottle.


Superlative as an aperitif, it matches perfectly with fish and meat appetizers, as well as with finger food dishes.
