Following an initial fermentation in steel tanks and partially in barriques; the base of 100% Ribolla Gialla grapes are re-fermented in large horizontal autoclaves; followed by a fining process on the lees for a period that is never less than 30 lunar cycles.
The long refining process is completed by at least 12 months in the bottle.
Excellent as an aperitif, Ribolla Brut is a wine for all occasions.
It is also perfect for dishes based on fish and shellfish.
