The grapes are destemmed and brought to automatic and temperature controlled stainless steel tanks; the fermentation on the skins lasts about two weeks, while the ageing from the following spring, continues in seasoned oak barrels.
It marries well with red and white meat, noble poultry and wild game; hard and long aged cheeses.
