The name comes from “Dal Pic”, in the Friulian dialect, the peak of the hill, the land with the best exposure. The Merlot grapes are harvested in trays and placed in the drying rooms, at controlled temperature and humidity, where their juices become concentrated in order to further enhance the wine’s aromas and body. Maceration on the skins then follows for about 20 days. Starting from the spring, our Merlot matures in Allier-Troncais French oak barriques for two years.
Red meat, wild game, seasoned goat and cow milk cheese are its ideal pairings.
