This native grape variety was already known in ancient Roman times. The grapes are destemmed and macerated on their skins at 4 ° C for one week. The short fermentation that follows is carried out in vats of stainless steel at controlled temperatures. The maturation and refinement continues in stainless steel until spring. It is a technique that gives us a red wine of great freshness; and is especially suited to accompany white meat dishes.
Outstanding with some fish dishes such as eel and oily fish, turbot and fish soups.
