The Schioppettino grapes that are handpicked and collected in trays, are spread out over mats that are placed in drying lofts where their flavours and body are further enhanced. This is followed by destemming and fermentation on the skins for about 3 weeks. For the next 18 months that follow, the wine is then fined in Allier French oak barriques.
This is a wine that accompanies noble wild fowl dishes.
