A classic white wine made by a cold maceration of the grapes for a whole night.
The subsequent fermentation in steel vats at rigidly controlled temperature lasts about two weeks. This is followed by fining on the lees until complete maturation.
It is a wine that is an excellent pairing for starters and salted fish dishes as well as crustaceans, both boiled and grilled, herb flavored risottos and soups.
